This complex is essential for the hydrolysis of glucidic macromolecules (starch), protein, glycerides (lipids), lactase and some food cellulase, particularly when there is a need for high food intake, and (or) there are disorders of the digestive processes . The added Lecithin (phospholipids) contributes to the emulsion (formation of micelles of glycerides) for subsequent hydrolysis by the lipase, with the formation of glycerol and dispersion of fatty acids.
