The digestive enzyme cellulase digests plant structures: the so-called cellulose. Fungi such as the yeast Candida also have a surface made of cellulose. There are almost no cellulases in everyday food. Cellulose digestion takes place, where possible, by bacteria in the organism. However, cellulases can also be supplied to the body from outside through food supplements.
